Lemon Essential Oil is an aromatic oil extracted primarily by cold pressing (mechanical expression) from the outer peel (epicarp) of fresh ripe lemons — Citrus limon (L.) Burm.f.
The lemon peel contains thousands of tiny oil glands embedded in the outer coloured layer — visible as tiny pores when you hold lemon peel to the light. These oil glands are filled with the volatile aromatic essential oil that gives lemon its characteristic sharp, clean, fresh fragrance. In cold pressing — the peel is mechanically abraded and pressed to rupture these oil glands and release the essential oil, which is then separated from the expressed juice and peel water by centrifugation.
The result is a beautifully fresh, pale yellow to greenish-yellow essential oil that captures the true aromatic character of the fresh lemon peel more authentically than any other extraction method — because no heat is involved, the volatile and delicate fresh citrus compounds (particularly the top note limonene and citral fractions) are preserved in their natural state.
